Farmraised Sturgeon has become an important alternative in the efforts to protect wild Sturgeon. This fish is raised in isolated tanks or ponds, taking the pressure off wild fisheries and their eco systems. Sturgeon is farm raised in California.

The unique character of the flesh makes it perfect for hot smoking.

Sturgeon have scales when they are young, but loose them as they get larger. Most orthodox rabbinic authoroties say that these fish are not kosher. However, the Conservative Movement's Commitee on Jewish Law and Standards has ruled that Sturgeon is Kosher.

 

(Sturgeon is not considered kosher beacuse it has skin instead of scales)
